Makes 24

12 fresh jalapeño peppers

8 ounces cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

24 slices of bacon

Salt and black pepper to taste

For Cooking: Olive oil or cooking spray


Step 1

Prepare the Jalapeños:

  • Wash and dry the jalapeño peppers.
  • Cut off the tops of the jalapeños and slice them in half lengthwise.
  • Use a spoon to scoop out the seeds and membranes, creating small jalapeño boats. Be sure to wear gloves or wash your hands thoroughly after handling the jalapeños to avoid touching your eyes or sensitive areas.

Prepare the Filling:

  • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, grated parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.

Stuff the Jalapeños:

  • Spoon the cheese mixture into each jalapeño half, filling them generously. Press the filling down slightly to make sure it’s secure. Wrap tightly in the slices of bacon.

Preheat the Griddle:

  • Preheat your griddle over medium-high heat. You want it to be hot but not smoking.

Grease the Griddle:

  • Lightly grease the griddle with olive oil or cooking spray to prevent sticking.

Cook the Stuffed Jalapeños:

  • Place the wrapped and stuffed jalapeños on the hot griddle, filling side up.
  • Close the griddle lid or cover the jalapeños with a large metal bowl or aluminum foil to help trap the heat and cook them evenly.
  • Cook for about 12-15 minutes, turning every 5 minutes or until the bacon is crisp and the jalapeños become tender and the cheese filling starts to melt and turn golden brown.

  • Carefully remove the stuffed jalapeños from the griddle using a spatula.
  • Let them cool for a minute or two before serving to avoid burning your mouth.
