Smash Burger with Miso Russian Dressing
Ingredients
Makes 4 double burgers
1 lb of meat divided into 2 ounce balls
1 sweet white onion sliced thinly
1 large tomato sliced thinly
8 Slices of American cheese
8 sesame seed burger buns
Miso Russian (recipe below)
1/2 head of iceberg lettuce shredded
2 pieces of parchment, cut into 4 squares each
Miso Russian
1/4 cup mayonnaise
2 tablespoons ketchup
1 tablespoon white miso paste
2 teaspoons red wine vinegar
1 teaspoon Dijon mustard
3 tablespoons dill relish
1 teaspoon sriracha (optional)
Whisk everything together in a bowl and set aside.
Preparation
Step 1
Heat an iron skillet or flattop grill over high heat.
Set the burger meat on top with no oil cover with a piece of parchment and press with a burger press or heavy spatula until smashed. Cook about 2 minutes.
Step 2
Scrape under the burger so you don’t leave any of that beautiful char on the grill. Flip and add your cheese cooking 1 minute more.
Step 3
Top the bottom of a burger bun with a generous amount of the Russian dressing, followed by the burger, patties, tomato, lettuce and top bun.
